A4 and A5 are the standard sizes the production process is set up for by default, so a single copy can be run efficiently on its own. Other sizes need extra setup adjustments that aren't worth doing for just one or two copies, so a small minimum keeps those runs cost effective rather than charging a lot for a single odd-sized booklet.
Digital printing is quicker to set up and more cost effective below that volume, while litho becomes more economical once you're printing enough copies to justify making printing plates. Quality is strong either way, litho actually tends to give very consistent, slightly richer colour at scale, so the switch is really about cost efficiency at volume rather than one method being better than the other.
Saddle stitching folds and staples sheets through the spine, and beyond a certain page count the booklet starts to bulge unevenly at the fold and becomes harder to staple securely. Wiro binding doesn't have that folding limitation, which is why it can comfortably handle a much thicker booklet than saddle stitching can.
The staples sit along the spine fold and are trimmed flush, so you won't feel sharp edges, though you can usually see and feel the two small staple points along the crease if you run a finger over it. It's a normal, expected part of how a saddle stitched booklet is put together rather than something to worry about.
8 pages is the smallest practical option, which gives you a cover plus 6 inner pages, or effectively a cover front and back plus a few pages of content. Anything smaller than that doesn't really work as a stapled booklet, since you need at least one full folded section to staple through.
